FOUR DAYS OF PATIENCE.
Holy Joe’s started with a chance meeting in Carroll Gardens, Brooklyn, and a long-fermentation dough recipe shared with us there. Back in London, we spent the next year refining our 96-hour dough, slow-cooked tomato sauce, Italian cheeses and toppings until it all worked together.
